Chicken Taco Recipe

In our quest to avoid eating out, I've been looking for some new recipes and resurrecting some old ones. One that I hadn't made in years was this super simple chicken taco recipe:

1 pound boneless, skinless, chicken breast
1 cup chicken broth (I just dissolved a chicken bouillon cube in 1 cup of hot water)
1 package taco seasoning

Place the chicken in the bottom of the slow cooker. Dissolve the taco seasoning in the chicken broth and pour over the chicken. Cook until chicken is fork tender, then shred with a fork. You can use hard or soft taco shells, or in salads. I'm thinking they would also be good used in chicken enchiladas.

I love that one and we make it often, but you just reminded me I want to make it again. I usually make a can of cheese soup and make them into kind of enchiladas and put that on top.

Oh, that sounds wonderful, I think I will try it with some of my leftover turkey from Christmas!

Thanks for the recipe...I'll try it this week. I love my crockpot and I'm using it to help us cut down on eating out so much. Much easier when dinner is all ready since I'm at my most tired when it's time to cook that meal!

PS: We begin Dave Ramsey classes on Feb 1st...very excited!

Anonymous, you'll love the Dave Ramsey classes. They are terrific and very inspirational. I love my crockpot too. After a day of cooking 2 meals and a snack for the little kids, I have a hard time motivating myself to cook in the evening.
