Day 521 and frozen bananas
When my bananas get overripe, I stick them in the freezer until I need some to make banana bread. Then I thaw them in the microwave, cut the end off and just squish the banana out. Recently Tom commented on how many were in the freezer and I realized that there were um...quite a few. LOL. I took them out and counted them this morning; there were 26! Now I only need three to make a batch of banana bread so I think I need to find some other recipes for overripe bananas. I was thinking smoothies or banana shakes, of course. I could probably put some in pancake mix and make banana pancakes. Any other ideas that anyone can share?

I dont know the recipe have to try and find it, cause i made some really good soft banana cookies one time.

1 banana = 1 egg in cakes.
This is a cookie recipe I'm sure MrsC posted. I made them and they're really good.
Banana cookies (doubled)
4 1/2 cups flour
5 1/4 cups rolled oats
2 1/4 cups margarine
3 cups sugar
3 cups mashed bananas
3 teaspoons vanilla
3 eggs
3/4 teaspoon nutmeg
1 1/2 teaspoon baking soda
2 1/4 teaspoon cinnamon
3 teaspoons salt
Preheat Oven to 350 degrees
Cream margarine. Add sugar, and beat. Add eggs, and beat. Add banana and extract, mix well.
Add dry ingredients in small amounts, mix well. Adding the oats last.
Bake for 12 to 15 minutes.
You can add nuts or chocolate chips.
Okay, I cannot resist saying that this somehow reminds me of Mom and her freezers. I think bananas was the only thing she didn't have in hers. LOL

Smoothies
1-2 cup water in the blender
1 cup crushed ice (the ice needs to be floating above the blades)
4 ripe bananas
1/3 can frozen orange juice
Blend. Pour. Enjoy.
