Day 29 and the EF is going to be over $400!!!

The half.com deposit finally got made today which will bring our baby EF up to $440! WOW! I am totally amazed. That is incredible for us! The Christmas club account is set up and we need to decide how much we will be depositing into it. We are going to use it as a gift account so that when things come up that we need to buy gifts for (birthdays, weddings, baby showers, etc.), then it won't come out of our regular budget.

Okay, some goals for this week:
1. Continue to avoid Sonic drinks (except Tom will get one before band practice tomorrow)
2. Continue to avoid eating out (except for when we use our gift card that we were blessed with last week!)
3. Find some more stuff to sell. Dave says: "Sell so much stuff that it makes the kids think they're next!"
4. If we have any ballgames this week, only pay to get in and avoid the concession stand.
5. Fill out the paperwork to get Tom's student loans put in deferral or forebearance so that we can concentrate on some of this other stuff. Mine is already there since I'm going to college full-time.
6. Fill out the pro-rata sheet from Dave's book and send to our credit card creditors and try to work out something with them.

Another crockpot recipe that I'd like to share:
Salsa Chicken:
Ingredients:
chicken
1 cup salsa
Shredded Cheese (optional)

Put the chicken in the bottom of the crockpot, and pour the cup of salsa over it. Cook until it's done. Shortly before you're ready to eat, sprinkle a little shredded cheese on top, if you wish. As always, it depends on how fast your crockpot cooks on how long it will take to get done. I can start mine around lunch time and it will be ready for supper. I usually serve this with Spanish rice. If there are any leftovers, I shred the chicken and mix it with the rice and roll up in tortillas to make chicken & rice burritos for another meal.

I love the sell so much stuff comment! Sometimes I get in ebay moods and John teases me that he will have to nail down his computer so I dont try to sell it next. :-) Its great though when u see that extra money coming in!

You're almost half the way on your EF, and it hasn't even been a whole month - that's great!
